Nutrition Tip | Date & Apricot Oat Bars

TLT Bars: Truck Load of Taste Bars (Date & Apricot Oat Bars)

Makes 10 bars (115g per bar)
- 250g pitted dates
- 250g apricots, dried
- 1 cup water
- 45g coconut, desiccated
- 165g oats, uncooked, plain
- 140g spelt flour
- 100g olive oil or butter
- 100g raw sugar
- 100g mixed nuts

Directions:
1. Cook dates and apricots in the water for about 10 minutes until soft (stir frequently, slightly mash dates down). Add coconut and mix well. Set aside to cool.
2. To make the base: mix together oats, flour and sugar. Add butter (or olive oil) and some water to mix. Mix well.
3. Press 2/3 of the above base mixture into a greased tray (30cm x 20cm).
4. Spread apricot & date mixture on top of the base and press down lightly.
5. Add mixed nuts with sea salt to food processor and add to remaining base mixture. Stir together.
6. Spread reaming base & nut mixture on top and lightly press down.
7. Bake @ 200 C for 25 minutes or until golden brown on top
8. Let cool and cut into TLT Bars.
