Ingredients
- 1 cup rolled oats
- 1 1/2 cup almonds
- 1/2 cup macadamia nutes
- 1 cup pitted medjool dates
- 1 tsbp lemon myrtle – or more if needed
- 1/4 cup maple syrup
- 3-4 tbsp water
- 1 cup desiccated coconut – for rolling
Method
- Place the dates in water and soak for 10 minutes.
- Place the oats in the blender or food processor and blitz into flour. Pour out into a large bowl.
- Repeat this process with the almonds and macadamia nuts separately. You will need to stop the blender and scrape down the sides. Remove from blender.
- Remove the dates from the water and place into the blender. Once blended, add the blended oats, almonds and macadamia and mix.
- Add in the lemon myrtle, maple syrup and 2 tbsp of water. Blitz until it becomes a sticky mixture and everything is finely broken down. You will need to stop the blender and scrape down the sides a few times.
- Pour the mixture into the large bowl and use a large spoon to mix everything together. If it is a little dry, add in 1 tbsp of water and mix again. If it is too wet and sticky, sprinkle in 1 tbsp desiccated coconut and mix well.
- Using your hands, shape into balls – about the size of a ping pong ball – and then roll in the desiccated coconut to coat. Repeat until mixture is finished.
Notes:
- You can easily make this a slice instead! Simply press mixture into a baking paper lined tray, sprinkle coconut over the top and put in the fridge for at least 2 hours or until firm. Remove from tray, cut into slices and enjoy!
- Add more maple syrup or trying adding a squeeze of honey for added sweetness!
